We add at least double the amount of chilli and just cook the beetroot in the coconut milk Instead of using water so it thickens a bit. Also add more salt and lime juice to the green beans and it makes a lovely salty sour contrast to the earthy delicious curry. 

 

Everytime we've made it for anyone it's been a hit.
